Malai Kofta Recipe

Malai Kofta is popular North Indian Dish. It is the dish which you will find every indian restaurant. It is perfect dish for parties or any other special occasions. Malai means cream and kofta means fried cottage cheese and vegetable dumplings. These fried dumplings are added to the rich creamy, tomato gravy.

INGREDIENTS

For Kofta

  • 1 cup grated or scrambled cottage cheese(Paneer)
  • 1 cup boiled vegetables (Carrot, green peas, french beans)
  • 1 medium size boiled potato, peeled and grated or mashed
  • 1 spring onion (optional)
  • 1/2 tsp red chilly powder
  • 1/2 tsp turmeric powder
  • 1/2 garam masala powder
  • salt as per taste
  • cornflour
  • oil for deep frying
  • bread crumbs (optional)

For curry

  • 5 tsp oil
  • 1 big onion, roughly chopped
  • 1 big tomato, rouhly chopped
  • 1 tsp cumin seeds
  • 1/2 tsp fenugreek seeds/kasuri methi
  • 8-10 cashew nuts
  • 1 tsp red chilly powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • 5 tsp thickened cream
  • 1 tsp sugar
  • about 1 cup water
  • salt as per taste
  • coriander leaves for garnishing

DIRECTION

For Kofta

  • Drain all the water from boiled veggies, keep it on strainer or cloth for about 5-10 min
  • In a bowl mix paneer, boiled vegetables, mashed potato, red chilly powder, turmeric powder, garam masala powder, salt and spring onion (if using) and mix to form stiff dough
  • If dough becomes too much loose, add some cornflour or bread crumbs
  • Make small lemon sized balls
  • Roll them in cornflour to avoid spreading out paneer in oil
  • Deep fry the koftas till golden brown and keep asidemalai kofta

For Curry

  • Heat the 2 tsp oil in a pan, add cumin seeds and fenugreek seeds, fry them for few seconds and add chopped onion
  • Fry the onion till it turns brown and add tomatoes and salt
  • Add 1/2 cup water and cashew nuts and cook till tomatoes became juicyhow to make malai kofta
  • Let the mixture cool down for 5 min and make it into very fine paste, use some water if needed
  • Add 2-3 tsp oil in pan and pour the tomato onion paste, sauté for 2-3 min
  • Add red chilly powder, coriander powder, garam masala powder and turmeric powder, mix
  • Add water and let it simmer for 3-4 min
  • Add sugar and fresh cream, and mixindian kofta curry
  • Add koftas to the gravy, garnish with coriander leaves
  • serve hot with naan, roti, jeera rice

Note

  • If thickened cream is not available, you can use 3-4 tsp milk powder mix with 2-3 tsp milk or water
  • You can add nuts (cashew nuts, raisins) to the koftas
  • If you are serving after some time, do not  add koftas to the gravy, add it while serving
